Originally from Ireland, this cabbage salad was made at the end of the month with left over vegetables. Today, this side dish is a BBQ and picnic classic. This is a fairly standard recipe – just add spices or additional vegetables like red bell pepper for a bit of flair.
1/2 carrot, grated
1 white onion, grated
1/2 head red cabbage, finely chopped
parsley, roughly chopped
salt and pepper
Mix all the ingredients together and season. Add additional spices and/or vegetables as desired. Serve alongside homemade burgers, or in sandwiches.
